Barley Risotto

Serves 6


Barley is a great grain often forgotten amongst the never ending servings of steamed brown rice. Similar to the short grain white rice risotto, it’s creamy and belly warming, without the evil **gasp** white stuff which is often full of sugar.

Here is a basic risotto recipe that's full of good complex carbs and compliments almost any meal. 

1 cup barley
1 tsp. olive oil
2 cups chicken stock
1 tsp. cumin
½ onion, chopped fine
Dash salt and pepper

Combine all ingredients, except the stock, in a large sauce pan or small dutch oven over medium heat. Stir continuously until the onions soften, about 4 minutes. Add chicken stock and turn up the heat a bit. Once it comes to a boil, reduce heat to simmer, cover and continue to cook for 40 minutes.
