1 Tablespoon white wine vinegar 1 teaspoon Dijon mustard 2 teaspoon extra virgin olive oil ½ teaspoon salt Zest and juice of one lemon 1 8 ½ ounce can quartered artichoke hearts in water, drained 1 small fennel bulb, thinly sliced 8 oil-cured black olives, pitted and chopped 2 cups drained canned solid white tuna (in water)
