Mediterranean Tuna Salad

1 Tablespoon white wine vinegar
1 teaspoon Dijon mustard
2 teaspoon extra virgin olive oil
½ teaspoon salt Zest and juice of one lemon
1 8 ½ ounce can quartered artichoke hearts in water, drained
1 small fennel bulb, thinly sliced
8 oil-cured black olives, pitted and chopped
2 cups drained canned solid white tuna (in water)

Whisk vinegar, oil, mustard, salt, and lemon zest and juice in a large bowl. Stir in artichokes, fennel, spinach, onion and olives. Add tuna and toss gently to combine. Refrigerate up to two hours.
