Raspberry Chipotle Pork Tenderloin

Here's a favourite recipe with pork tenderloin.  Chipotle pork is delicious and this raspberry addition takes it over the top.  We all know that pork baked without fattening ingredients is a great, healthy choice.  This delicious pork recipe will soon become a favourite when you're cooking something 'a little more fancy'.

Time saving tip: I like to mix this up in a Ziploc freezer bag as soon as I get back from the store and freeze it. That way it’s always ready go when we are and I’m not waiting the required 24 hours marinating time. You can even bake this one frozen or defrost overnight in the fridge or microwave. Serve alongside Barley Risotto.

1 large Ziploc freezer bag
1 large pork tenderloin
1 tsp. chipotle spice rub
1 Tbl. Olive oil
1 cup raspberries
Salt and pepper, to taste

Bake in a shallow pan at 350 degrees farenheit for one hou,r or until internal temp reaches 160 degrees, covered with tin foil.  Remove from pan and let rest, tented with foil, for 10 minutes before slicing.
