Southwestern Corn Salad
This Southwestern salad is a great and healthy option for your next meal. It's easy to make with common ingredients and adds a little spice to your dish. Salads are often created to be unhealthy when fattening dressings are added. There's no risk with that in this dish as you eat it exactly as described below.
Southwestern salad is another personal favourite of both adults and kids alike.
1 cup pound of frozen corn
¼ cup of cilantro (or to taste)
½ cup of water
½ chopped rep pepper
½ minced jalapeno (or to taste)
Pinch of pepper
Add corn and water to a medium saucepan and bring water to a boil. Cover pan, reduce heat to medium and let simmer for three minutes. Drain and add to a serving dish. Add red pepper, jalapeno, cilantro, pepper and toss to coat.
Makes four servings.
